In the Kitchen: Healthy and Delicious Guacamole
Apparently there’s a “big game” this weekend…?? I don’t know. It’s my birthday tomorrow, so I may or may not be focused on that… *ehem*
Anywho – if you’re watching the big game – or, like me, if you tolerate the game so you can watch commercials and the half-time performance – then you’re probably looking for the next-most important part of the big night…snacks!
We make guacamole a lot around our house. But it’s delicious and my husband has perfected the art of simplicity.
Here’s what you’ll need:
Cut the avocados in half and score slices into the halves.
This makes it easier to squeeze out the avocado from its shell into the bowl.
Do this with all the avocado halves.
Make room on your cutting board and slice the lemon in half.
Squeeze the half lemon onto the avocado.
Add the cumin (we like a lot) and salt – to taste.
Mash it up and mix it up.
Taste it for seasoning – add more if necessary. Scoop a huge amount onto a celery stick and gobble it up.
Here’s the recipe (of sorts):
juice of 1/2 lemon
1 tsp cumin (or to taste)
1 pinch of salt (or to taste)
Mix together in a bowl.
*Note: enter the Great Cilantro Debate when it comes to guacamole. I love it. Lots of it. David could take it or leave it. If you have it, chop it fine and add it. Or not. Or do it. I would. But that’s just me.
