Pumpkin Oatmeal

I’ve had a few requests for my pumpkin oatmeal recipe – so here you go! It’s my new favorite way to eat oatmeal, and an awesome way to get a veggie in before noon. 🙂 My 13mo loves oatmeal, but wouldn’t eat pumpkin on its own – so I love giving this to her.

PUMPKIN OATMEAL
(serves 2)

1 cup oats (I use rolled, but you could use whatever you have – steel cut, quick)
1 1/2 cups milk (almond, soy, cow, whatever)
1/2 cup cooked, pureed pumpkin (could use canned)
cinnamon
nutmeg
allspice

toppings:
maple syrup
pecans
splash of milk

Cook oats and milk together for about 2 minutes. Add pumpkin and spices and cook until oats are done (add more milk if needed). Add toppings to individual bowls, or set toppings on the table for each person to help herself.

Alternative topping ideas: dried cranberries, pumpkin seeds, walnuts

The pumpkin is sweet and makes the oatmeal thick and creamy. Enjoy!
